The Problem with Pancakes

Every Saturday morning the husband makes a wonderful batch of homemade batter and whips up some pancakes. We're all big fans and I pretend that I don't know how to make them. It's really a win-win.
The problem emerges with the leftover batter. We usually have enough left over for 2 smallish pancakes. I always say, "Hey, what do you want me to do with the batter?" and the husband replies with, "Let's save it for some late night pancakes this week!"
Then every Friday as I'm loading up the groceries I grab the leftover batter and clean it out. We've made a pancake snack about 2 times.
Then I read this article and sent it to the husband.
This week we just threw out the batter. I feel so much better.
It's really all about the little things isn't it?

I completely agree. I will say, though, that if there is just a little batter left, then we make the pancakes and Aurelia eats them for lunch. We make the south beach batter, so it's super-full of protein. I put peanut butter between the pancakes and it's a great little sandwich. Let's hear it for getting rid of clutter!

That's a really good idea. The toddler would love that!

That's a great blog! I am bad about keeping leftovers that I know we won't eat then I procrastinate cleaning them out of the fridge.
I have found that I can freeze pancakes and use them again the next week. Just pop in the microwave for about 10sec. Not quite as good as fresh made though.

Freezing already made pancakes is such a good idea. So much better than leaving batter in my fridge!
